We at Grand Adventure Company can’t imagine going a week without stopping in Fiesta Jalisco at least once, loving its casual vibe, reasonable prices, and the spicy delights served on a regular basis. Today’s guide to this wonderful eatery will prove once again that your Colorado vacation is destined to be one that introduces you to the deliciousness of our favorite foods!
The Restaurant
Located at 455 Anglers Drive, Open Daily 11 AM to 10 PM
The people of Mexico are a colorful bunch, thriving on the vibrant jewel tones that decorate their homes and their closets, and Fiesta Jalisco will give you a peek into that world. Walls painted in warm gold, tabletops that are mostly red and are accented with authentic Mexican tiles, and large and comfortable booths topped with red or green leather—everywhere you turn you will find bright and vibrant color that always brings cheer. A small patio outside offers metal tables topped with umbrellas in a variety of hues and in the warmer months is a popular place to sit and enjoy your chips, salsa, and frothy margaritas. A cheerful atmosphere and friendly and efficient staff are a part of why we love this place so much, but of course, it is the food that keeps us coming back time and time again.
The Menu
The first thing you are about to learn from your visit to Fiesta Jalisco is just how little willpower you possess, and the warm chips and fresh salsa placed on your table soon after being seated are what will test you the most. Just like in those old potato chip commercials, you can’t eat just one tortilla chip, and if you decide to order a side of guacamole, all we can say is we hope you came in with an empty belly and a large appetite. Otherwise, you are going to be heading back to your Grand Adventure Company retreat with more than a few boxes of leftovers; the portion sizes here are huge!
The menu may look familiar, as most visitors will have eaten at least one Mexican restaurant over the years, but the flavors that explode in your mouth will remind you that authentic is so much better. Don’t ask us to tell you our favorite dish, we love them all, but we do recommend that you step out of your comfort zone and order a meal that you probably can’t translate the name!
